Ingredients For Special Poha:

  • Poha: 80 g
  • Sunflower oil: 2 tsp
  • Peanuts: 10 g
  • Mustard seeds: ½ tsp
  • Cumin seeds: ½ tsp
  • Asafoetida (hing): 1 pinch
  • Curry leaves: 3–4 pieces
  • Onion (finely chopped): 60 g
  • Green chilly (finely chopped): 1 piece
  • Carrot (finely chopped): 20 g
  • Capsicum (finely chopped): 20 g
  • Green peas: 20 g
  • Coriander (finely chopped): 1 tbsp
  • Lemon juice: 1 tsp
  • Salt: to taste

Instructions For Special Poha:

  1. Soak the poha briefly (just until it softens). Drain any excess water. In a mixing bowl, add salt to the soaked poha and mix gently to combine.
  2. Heat sunflower oil in a frying pan and roast the peanuts on low flame until lightly golden. Remove and keep aside.
  3. In the same oil, add mustard seeds and let them splutter. Then add cumin seeds, a pinch of asafoetida, and a few curry leaves. Sauté for a few seconds.
  4. Add the finely chopped onion and green chilly. Sauté until the onion becomes translucent. (Option: add a pinch of turmeric powder here and sauté once more.)
  5. After about 2 minutes, add the chopped carrot, green peas, and capsicum. Sauté, then cover and cook on low–medium heat until the vegetables are tender—stirring occasionally so nothing sticks.
  6. Add the soaked poha to the pan and gently mix so the veggies and spices combine evenly with the poha. Take care to keep the poha fluffy and not mushy.
  7. Cover and simmer for about 4–5 minutes, or until the flavours are well absorbed and everything is heated through.
  8. Turn off the heat. Add the roasted peanuts, chopped coriander leaves, and lemon juice. Mix gently to combine.
  9. Serve the special poha immediately—optionally topped with some sev for extra crunch.

Tip: Adjust green chilli and salt to taste. You can add a pinch of sugar if you like a slightly sweet-sour balance.
