Ingredients for Palak Khichdi with Brown Rice

  • Spinach (Palak): 100 g
  • Green chilli: 1, sliced (about 3 g)
  • Garlic: 2 cloves (approx. 6 g)
  • Ginger root: ½ tsp (about 2 g)
  • Cumin seeds: ½ tsp (about 2 g)
  • Walnuts: 1 medium piece (about 3 g), roughly chopped
  • Asafoetida (Hing): 1 pinch
  • Curry leaves: a few (approx. 1 g)
  • Cinnamon stick: 1 inch
  • Moong dal (raw): 50 g
  • Brown basmati rice: 50 g
  • Onion: 1 small (about 70 g), finely chopped
  • Salt: to taste
  • Water: ~3 cups (adjust as needed for desired consistency)
  • Oil/ghee (optional): 1 tsp for tempering (optional)

Instructions for Palak Khichdi with Brown Rice

  1. Rinse the brown rice and moong dal separately until the water runs clear. Drain and keep aside.
  2. Wash the spinach well, roughly chop it, and set aside.
  3. Heat 1 tsp oil or ghee in a heavy-bottomed pot or pressure cooker over medium heat. Add the cinnamon stick and let it sizzle for a few seconds.
  4. Add cumin seeds and let them crackle. Immediately add a pinch of hing and curry leaves; sauté for a few seconds.
  5. Add the finely chopped onion, sliced green chilli, minced garlic and grated (or finely chopped) ginger. Sauté until the onion becomes soft and translucent.
  6. Toss in the chopped spinach and chopped walnuts. Cook for 2–3 minutes until the spinach wilts and reduces in volume.
  7. Add the rinsed moong dal and brown rice to the pot. Stir well to combine all ingredients so the spices coat the rice and dal evenly.
  8. Pour in about 3 cups of water (use slightly more for a softer, porridge-like khichdi or slightly less for a drier texture). Add salt to taste and give everything a good stir.
  9. If using a pressure cooker: close the lid and cook for 3–4 whistles on medium-low heat (adjust depending on your cooker). If using a pot: bring to a boil, then reduce heat, cover and simmer for 25–35 minutes until rice and dal are soft—stir occasionally and add more water if needed.
  10. When cooked, let the pressure release naturally (if using a cooker). Open, check texture and mash lightly with the back of a spoon if you prefer a creamier khichdi.
  11. Adjust seasoning. Finish with an optional drizzle of ghee or a few chopped walnuts on top for extra texture and aroma.
  12. Serve hot as a comforting one-pot meal.
