Multigrain Chapati (kneaded with boiled moong dal)

Ingredients:

  • Moong dal (raw, boiled): 30 grams
  • Multigrain flour (low GI): 40 grams
  • Ajwain (carom) seeds: 1 gram (about ¼ tsp)
  • Ghee: 1 tsp 
  • Green chilli: ¼, sliced — optional
  • Salt: as per requirement

Instructions:

  1. Rinse the raw moong dal thoroughly. Boil the dal in just enough water until it's fully soft but not mushy — it should break easily with a spoon. Drain any excess water and let it cool slightly.
  2. In a mixing bowl combine the cooled boiled moong dal and multigrain flour.
  3. Add ajwain seeds, sliced green chilli (if using), ghee and salt to the bowl.
  4. Mix everything together and add small amounts of warm water only if needed. Knead into a soft, pliable dough — the boiled dal will add moisture, so go slowly with extra water.
  5. Cover the dough and let it rest for 10–15 minutes to hydrate the flour and settle the flavors.
  6. Divide the dough into equal-sized balls. Lightly dust a rolling surface with dry multigrain flour and roll each ball into a thin round chapati.
  7. Heat a tava or non-stick skillet over medium-high heat. Cook each chapati for 30–45 seconds on the first side until small bubbles appear, flip and cook the other side for 30–45 seconds. Apply a little ghee on both sides if desired and press gently with a spatula until the chapati has light golden brown spots and is cooked through.
  8. Keep the cooked chapatis covered in a cloth to stay soft. Serve warm with your choice of curry, chutney, or raita.
