Masoor Dal Fry

Masoor Dal Fry

Ingredients for Masoor Dal Fry

  • Masoor dal (red lentils): 40 grams
  • Ghee: 2 tsp
  • Garlic: 2 cloves, crushed
  • Ginger: ½ tsp, grated
  • Coriander (fresh): 1 tbsp, chopped
  • Cumin seeds: ¼ tsp
  • Onion: 2 tbsp, finely chopped
  • Tomato: ¼ small, finely chopped (use ~one small tomato if preferred)
  • Salt: as per requirement

Instructions for Masoor Dal Fry

  1. Rinse the masoor dal under cold water until the water runs clear.
  2. Place the rinsed dal in a small pot with about 2–2½ times its volume of water (approx. 120–150 ml). Bring to a boil, then reduce heat and simmer until the lentils are soft and breaking apart (about 12–15 minutes). Skim off any foam. If using a pressure cooker, cook 1–2 whistles and let pressure release naturally.
  3. While the dal cooks, prepare the tempering: heat the ghee in a small frying pan over medium heat.
  4. Add cumin seeds and let them sizzle for a few seconds. Then add the finely chopped onion and sauté until translucent (about 2–3 minutes).
  5. Add crushed garlic and grated ginger; sauté for 30–45 seconds until fragrant (do not burn).
  6. Add the chopped tomato and a pinch of salt. Cook until the tomato softens and the oil starts to separate slightly (about 2–3 minutes).
  7. When the dal is cooked, add salt to taste and, if the dal is very thick, add a little hot water to reach your desired consistency. Bring to a gentle simmer.
  8. Pour the prepared tempering (onion–garlic–tomato mixture) into the cooked dal and stir well. Simmer together for 1–2 minutes so flavors combine.
  9. Turn off the heat and stir in the chopped coriander leaves.
  10. Serve hot with steamed rice, roti, or as desired.

Yes, you can change the amount of oil used in the recipe but you will have to manage it from the next or previous meal of the same day. The total amount of oil/fat prescribed for a day must not be increased or decreased i.e. you have to cook entire day food with a given amount of oil in a day. This is applicable to those who are following Dr. Pankaj Kumar's diet plan.
