Ingredients for Khichdi with Rice and Lentil:

  • Brown basmati rice: 40 grams
  • Moong dal (raw): 40 grams
  • Other lentil: 20 grams
  • Turmeric powder: ½ tsp
  • Dry chillies: 1 piece
  • Cumin seeds: ½ tsp (whole)
  • Salt: as per requirement
  • Ghee: 1 tbsp

Instructions for Khichdi with Rice and Lentil:

  1. Rinse the brown rice and the lentils (moong dal and the other lentil) under running water until the water runs clear. Drain well. (Optional: soak them together for 15–30 minutes to reduce cooking time.)
  2. Heat the ghee in a heavy-bottomed pot or pressure cooker over medium heat.
  3. Add the cumin seeds and dry chilli; sauté briefly until the cumin becomes aromatic and the chilli darkens slightly (about 20–30 seconds). Be careful not to burn the spices.
  4. Add the drained rice and lentils to the pot and stir for a minute so they are coated with ghee and spices.
  5. Sprinkle in the turmeric powder and add salt to taste. Mix everything well.
  6. Add water — enough to cook the rice and lentils until soft (if not soaked, use about 3–4 times the combined volume; adjust as needed).
  7. Bring to a boil, then reduce heat to low and cook covered until the rice and lentils are very soft and break down (or close the pressure cooker and cook for 2–3 whistles, then let pressure release naturally).
  8. Open the pot, mash slightly with the back of a spoon if you prefer a creamier texture. If the khichdi is too thick, add a little hot water and simmer for a minute to reach desired consistency.
  9. Check seasoning and adjust salt. Finish with a small drizzle of ghee on top for extra flavor.
  10. Serve hot with yogurt, pickle, or a simple salad.
