Ingredients (for 1 serving)

  • 100 ml milk + 100 ml water (or use 200 ml unsweetened almond milk)
  • 1 small khajoor (date), deseeded and very finely chopped or mashed
Tip: 1 date keeps sugars low. Avoid adding extra sweetener.
  • 1/2 tsp whole wheat flour (for slight body; keep measured)
  • 1/2 tsp almond powder (adds healthy fats and mild protein)
  • 1/4 tsp ginger powder (saunth)
  • 1 pinch cardamom (elaichi) powder
  • 1/2 tsp ghee (optional; for aroma and satiety)
  • Optional add-ons (diabetes-friendly): 1 tsp flaxseed powder or 1 tsp chia seeds (soaked 10 min) to increase fiber. 

Method

  1. Warm ghee in a small pan on low flame.
  2. Add wheat flour and almond powder. Roast gently 60–90 seconds till aromatic and just golden.
  3. Stir in ginger powder and elaichi for 10–15 seconds.
  4. Add the finely chopped/mashed date and mix so it coats well.
  5. Gradually pour in the milk + water (or almond milk), whisking continuously to avoid lumps.
  6. Simmer on low for 3–5 minutes till slightly thick and the date softens into the raab.
  7. Rest 1 minute and serve warm. (Add optional flax/chia just before serving; stir well.)
