Gobhi paratha with Aashirwaad multigrain flour

Ingredients:

  1. Aashirwaad multigrain flour: 40 grams
  2. Cauliflower (gobhi): 2 florets 
  3. Green chilli: ½ 
  4. Garam masala: 1 pinch
  5. Salt: as per requirement
  6. Olive oil: 1 tsp 
  7. Water for kneading (as needed)

Instructions:

  1. Grate the cauliflower florets finely and place them in a bowl. Squeeze gently to remove excess moisture; keep a little moisture to help the dough bind.
  2. Add sliced green chilli, garam masala, and salt to the grated cauliflower. Mix well to create the gobhi filling.
  3. In a separate bowl, put the Aashirwaad multigrain flour. Add a pinch of salt if you like and begin adding water little by little to form a soft, pliable dough. Knead for 2–3 minutes. Let it rest for 5–10 minutes covered.
  4. Make a small ball of the dough. Flatten ball slightly, dust with a little flour, and roll gently to form a small disc.
  5. Place a spoonful of the gobhi filling in the center of the disc. Fold the edges over the filling to enclose it, pinch to seal, and gently flatten into a stuffed ball.
  6. Dust with flour and carefully roll each stuffed ball into a paratha of about 6–7 inches diameter, using light, even pressure so the filling doesn't spill out.
  7. Heat a non-stick tava or skillet over medium heat. Place the rolled paratha on the hot tava. Cook for 30–40 seconds until small bubbles appear, flip, and drizzle a little olive oil on the cooked side.
  8. Flip again and press gently with a spatula; cook until both sides are golden brown and cooked through. Add the remaining olive oil if needed.
  9. Remove from heat and keep covered in a clean cloth for a minute to stay soft. Serve hot with yogurt, chutney, or a light pickle.
