Cheese Paratha with Aashirwaad Multigrain Flour

Cheese Paratha with Aashirwaad Multigrain Flour

Ingredients for Cheese Paratha:

  1. Aashirwaad multigrain flour: 40 g
  2. Mozzarella cheese (diced): 20 g
  3. Onion (finely chopped): 1 tbsp
  4. Black pepper (ground): ¼ tsp
  5. Green chilli (sliced): ¼ tsp
  6. Olive oil: 1 tsp
  7. Salt: as per requirement

Instructions for Cheese Paratha:

  1. In a bowl, combine the Aashirwaad multigrain flour with a pinch of salt. Add warm water little by little and knead into a soft, pliable dough. Cover and rest for 10–15 minutes.
  2. Prepare the filling: mix the diced mozzarella, chopped onion, sliced green chilli and ground black pepper in a small bowl. Add a pinch of salt if needed and toss lightly so the filling is evenly combined.
  3. Roll dough into a small ball and flatten slightly. Dust with flour and roll out into a small circle.
  4. Place 2–3 tablespoons of the cheese filling in the center of the rolled dough. Bring the edges together to seal the filling fully, then gently flatten the stuffed ball.
  5. Carefully roll out the stuffed dough into a medium-thin paratha (take care so the filling doesn’t spill out). Use light dusting of flour as needed.
  6. Heat a tawa or non-stick pan on medium heat. Brush the pan with a little olive oil. Place the rolled paratha on the hot pan and cook until small bubbles appear.
  7. Flip the paratha and drizzle a little olive oil on the cooked side. Cook the other side until golden brown spots appear and the cheese inside melts . Press gently with a spatula for even cooking.
  8. Remove from heat. Serve hot with plain yogurt, pickle, or chutney.

Yes, you can change the amount of oil used in the recipe but you will have to manage it from the next or previous meal of the same day. The total amount of oil/fat prescribed for a day must not be increased or decreased i.e. you have to cook entire day food with a given amount of oil in a day. This is applicable to those who are following Dr. Pankaj Kumar's diet plan.
